What is CereMOONial?
Our CereMOONial Chocolate consists of one ingredient: Organic Belizean Cacao.
We intentionally initiate the chocolate-making process in alignment with major phases of the moon, hence the name. We strongly believe in the power and significance of the ecosystem from which this ingredient comes from, thus we feel confident in sharing it with the world with the invitation to consume it with awareness & intention. These qualities, paired with the jungle medicine, have the potential to bring forth a sense of clarity, joy, unification and harmony.

A note on Ceremonial Cacao:
We acknowledge that there are no universal qualifications for what constitutes
ceremonial cacao.
We believe in the power of intention, we believe in the inherent wisdom of the Jungle, and we believe this Cacao is a wonderful addition to ritual and ceremonial settings.
It is with great care that we bring forth this offering and trust that our mission honors the legacy of those who have likewise weaved it's spirit into their world.
Origin: A snapshot
All of our Cacao comes from the heartbeat of the Jungle and has been in the care of Mayan communities of Toledo, the Southern region of Belize.
Grown through Organic & Regenerative Practices, Marco, the grower of this Cacao and student of Permaculture, Agroforestry and Traditional Mayan Medicine, has inherited his grandfather's Cacao farm where he passionately communicates with the living system he has helped create and embodies his role as a teacher and guide for his community.

Serving Sizes

1 chocolate bar = 3 to 4 servings of drinking chocolate
If making single servings, use the slits as a guide, and split your bar into 3 sections. Finely chop individual sections with a chef's knife to prepare for melting.
For those of you who have purchased a Pouch (1 lb bag), the chocolate is already portioned for you into
24 servings.
For every single serving of chocolate, calculate about 1 cup of purified water or milk of your choice.

How to
PREPARE

You will need a pot (relatively to the amount of drink you will prepare), a stainless steel bowl that can fit on top of the pot without falling in, a whisk, a silicone spatula, a wooden cutting board, and a chef's knife.

Pour a little bit of water into your pot (about 2'' from the bottom) and place on stove, on low heat. Set the stainless steel bowl on top. Here, you are creating a double boiler or 'baine marie'.

Chop your bar of chocolate (or individual sections) into slivers using your chef's knife.

Place your chopped chocolate inside of the stainless steel bowl that is resting on the pot. As the water in the pot begins to steam, you will notice your chocolate will begin to melt. Stir occasionally to create even consistency. To protect the chocolate from burning, remove from heat once fully melted (place your bowl on the counter).

Now, back to the pot. Pour out the water you utilised for the double boiler. Using the cup measurements we provided above, and relative to the amount of chocolate you've chopped and melted, pour your chosen liquid into the pot. This could be filtered water, your choice of milk, or a little bit of both. Our recommendation is a little bit of both, to balance out the creaminess. Keep heat on low.

Once the liquid seems warm, but not boiling, use your silicone spatula to thoroughly guide the melted chocolate from your stainless steel bowl into your warm liquid. Use your whisk to stir and fully incorporate the chocolate.

Add your desired spices! A pinch of salt is always nice. As per sweeteners, avoid honey, and feel into the level of sweetness you'd like to create, we suggest keeping it subtle. Keep stirring, ensuring the heat stays on LOW, and that the mixture never boils.

Lastly, to fluff your drink, whisk it vigorously for a few minutes. Turn off the stove, and lid the pot to allow flavours to integrate.
